With spring in full swing, I’ve been day-dreaming of enjoying the great weather and outdoor activities including picnics and BBQ’s! A must have at all of our picnics and BBQ’s is potato salad. It is definitely a crowd pleaser and goes with so many dishes – you can never go wrong whipping up a batch. Let’s get started!
5 Medium Potatoes (we like red potatoes best)
8 Eggs, Hard Boiled (save 2 eggs to use for garnish on the salad)
¼ Teaspoon Salt
1/8 Teaspoon Pepper
½ Cup Mayonnaise
½ Cup Sour Cream
2 Tablespoons Sugar
1 Teaspoon Mustard
Let’s put it all together!
Boil potatoes – do not peel – for about 15-20 minutes until potatoes are tender, but still firm.
Peel and dice potatoes, as well as 6 eggs.
Add salt and pepper, toss together. Mix the remaining ingredients and fold into the potato mixture
Slice remaining 2 eggs and layer on top of your salad. Sprinkle top of salad with Paprika.
Refrigerate overnight or minimum of 6-8 hours ENJOY! +
